Take your desserts to a whole new level with handmade raspberry gelatin caviar!. This DIY raspberry caviar recipe is the perfect topping to a cupcake, cake, mousse and more
Ingredients
- 2 envelopes (.5 ounces) unflavored gelatin
- 1 package Raspberry gelatin
- ¼ cup and 3 tablespoons water
Oil bath:
- 2 cups ice
- 1 tablespoon salt
- 2 to 3 cups canola oil (cold – overnight in the cooler)
- Big bowl
- Sieve
- Squeeze-bottle or a medicine dropper
Directions
- Leave the oil in the cooler overnight
- In a microwave-safe container combine 3 tablespoon (room temp) water with the unflavored gelatin, let it bloom for 2 minutes; Add the Raspberry gelatin into ¼ cup boiling water and stir, reserve it
- Microwave the unflavored gelatin for 20 to 45 seconds until dissolved, combine both gelatins, stir to dissolve lumps, if necessary microwave for 20 to 30 seconds, cool it down before starts the caviar process
- In a big bowl add the ice, salt, and a little water to accommodate the container with oil (already cold, overnight in the cooler); With a plastic squeeze-bottle or a medicine dropper start to drop 2 to 3 gelatin drops at a time, moving around to avoid the same spot. Leave the caviar in the cooler, if the gelatin gets hard just microwave for 5 to 10 seconds (do not overheat). When the process is finished use a sieve to separate the caviar from the cold oil and enjoy!
Decorate cakes, mousses, fruits, pavlovas and all the desserts you can imagine!
